Also, I have my first wedding this Friday - I've got so many emotions going on about that it's crazy. Then Saturday's order is for a birthday party at the San Antonio Children's Museum - AMAZING! So, I've been thinking about changing the name of my JESSICA RABBIT cupcake. It's a carrot cake with perfectly sweet cream cheese frosting topped with carrot shreds and pecans. But now...I'd like something a bit funny or a bit interesting or a bit more original to go along with the other cupcakes on the menu. HELP! This contest will run only a few days, 4 to be exact, the winner will be announced Wednesday, July 13th AND will get a free 6 pack of these jumbos on Friday, July 15th! Yes, I did. I baked them. Bacon & Maple syrup cupcakes.Several requests for this one and now it's done! I used a maple cream cheese frosting, which I really really liked. The cake itself didn't have enough bacon-y flavor (my personal opinion)...more testing...more bacon!

Husband said, "Good cupcake but I don't like the bacon part". WHAT!?! He's not a fan of the salty/sweet combo - fine, he is entitled, I suppose. Let's ask the kids. Kids said, "mmmm, can we have these for breakfast?"

Cupcakes for breakfast - Yes, that's my kind of breakfast!

Definitely an excellent choice for breakfast or even an after-midnight snack (which I've just had). So, tonight's results (in my house) 3 to 1. Tomorrow I get the deets from my taste testers (Gw). Can't wait to hear what they have to say about this one! Now, to come up with a name for it...I may have a "NAME THAT CUPCAKE" contest again. We'll see.

OH MY GOSH! I have been selected to provide Pinkalicious cupcakes for the Magik Theatre in San Antonio for their Pinkalicious Tea Party this Sunday, May 22nd! It's going to be awesome! I've already got my pink baking liners ready...see!

Ironically, I hadn't heard about Pinkalicious anything before a friend asked me to bake some cuppycakes for her daughter's Pinkalicious birthday party last month. So, I looked a bit into it and found the book about this little girl who loves pink, has a pink cupcake, suddenly her skin turns pink! Then, out of the clear blue Texas sky, I get an email from the Magik Theatre asking me about my cupcakes, next thing you know, I got it! WOOHOO! I will definitely be posting photos as soon as I can.

Today I baked for orders then decided to bake for photos. I've already had questions about Valentine's Day specials so I wanted to get some photos up right away for you to see. I decided on EAT YOUR HEART OUT - obviously, it's just perfect for the day and PLAIN JANE - because EVERYONE wants some sort of chocolate that day! Then I couldn't leave out the roses! We all love getting roses on Valentine's Day, well maybe not ALL of us, but most of us do.

I tried a bit of fruit in my buttercream frosting today...strawberries! I had some frozen berries and decided to try it on MR.PINK. The cupcake has strawberries in it AND NOW so does the frosting! Usually I frost MR.PINK with my perfectly sweet cream cheese frosting, however, I didn't have any cream cheese on hand so I made buttercream instead. I just added some mashed strawberries and ta da - STRAWBERRY BUTTERCREAM!

Taste-tester said: "THIS CUPCAKE IS FREAKIN' AWESOME!"

Of course, you can still choose the cream cheese frosting when you order your own MR.PINK cupcakes. Personally, I like this combo better.

The first seven days of 2011 were awesome! Thanks to everyone who ordered cupcakes this week. I had orders coming in from Missouri, Washington and California! Seeing everyones reaction when they receive a box of cupcakes from holyCUPCAKE is very pleasing! Jessica Rabbit was the most requested this week, then Johnny-choc-a-lot. Back to the kitchen...I feel like testing some recipes this weekend AND thinking about another "NAME THAT CUPCAKE" contest soon! SON OF A DONUT!

So, last week I was enjoying one of my favorite donuts and thought...why not a cupcake for breakfast? My quest to create a breakfast cupcake began! I love the messy raspberry filled powdered donuts that leave sugary goodness all over the place. I wanted to create a cupcake that I would enjoy with a nice cup of coffee. So, I put some ingredients together and came out with the perfect breakfast cupcake...SON OF A DONUT! It's got a hint of cinnamon in the cake, the mashed raspberry filling, of course, and generously dusted with powdered sugar. Give it a try, it's sure to please!

james dean - fancyAt 8 o'clock this evening my daughter tells me that she's having a classroom party tomorrow for the end of the year and I HAVE TO bake cupcakes for her class. So we set out all the ingredients and she helps me make the batter, fill the cupcake cups, put them in the oven and it's now bedtime. I put both kids to bed, pray for them & kiss them good-night. Back to the kitchen to make the buttercream frosting (yeay/i love frosting). Cupcakes are done now they must cool for a bit & I watch a grill-off competition on tv. Now it's time to frost the cupcakes. Since they are for second-graders I decided to sprinkle these JAMES DEAN's with whatever I had on hand. They came out quite pretty. I'm sure she'll be happy. I even left 4 unfrosted cupcakes for her to do herself in the morning.

A-mazing! I ordered the Plain Jane and Cheer up, Charlie and brought a few to work and they are a huge hit! The frosting is so light and fluffy and flavors are so smooth. I don't like those candies with the cherry goo in the middle but I do like chocolate covered cherries so I tried the flavors together in a cupcake and here you have my MAD MARASCHINO - a chocolate cake filled with a few cherries & syrup topped with vanilla whipped cream, chocolate sprinkles and a cherry on top!

Tested these 2 new cupcakes yesterday and they came out great! Madame Sofia and Chip Happens. Madame Sofia is a cupcake named after my daughter, who is seven, so the color of the buttercream frosting is sky blue (aqua) and it's decorated with 7 sugar pearls for her age. I also came up with the name Chip Happens for the chocolate chip cupcake topped with chocolate chip buttercream...i like that name - just sounds funny to me.
